I was looking for books on PSE3, and found these titles available from Amazon. You might want to check your local bookstore for them also:

Photoshop Elements 3 Down & Dirty Tricks (Down & Dirty Tricks)by Scott Kelby

The Photoshop Elements 3 Book for Digital Photographers (Voices) by Scott Kelby

Adobe Photoshop Elements 3.0 Other products by Adobe

Photoshop Elements 3 Solutions by Mikkel Aaland

Photoshop Elements 3 One-on-One by Deke McClelland

The Photoshop Elements Book for Digital Photographers by Scott Kelby

Adobe Photoshop Elements 3.0 Idea Kit (Idea Kit) by Lisa Matthews

Another that I found was this:
Jay Arraich has written Elementary School which is "a five hundred forty two page electronic book available in .pdf format on a CD-ROM. It contains one hundred eight heavily illustrated lessons for new users of Adobe® Photoshop® Elements 3. This book was written for beginners." There is a Chapter of the book that you can download for free at http://www.arraich.com/elements/pse3_aaMAINElementarySchool1.htm

I still haven't decided which of these books I will choose, but thought I'd share the titles with all of you. Maybe someone will have some experience with these authors and will offer guidance for those of us who are planning to buy a book.

Thanks for sharing, Pat! Some good titles there.

I have to plug my DSU class here, also. It's 160 pages with several hundred screen shots, so as much info as a book. Also, it's specifically geared to scrapping and has total instructor support the month you buy it ;) So even though it's a class, it's really a textbook!

You've taken the class, just adding the option to your great list. tfs!

You are so right Emma ... I should have added that I had taken your PSE2 class and learned so much from it. I have highly recommended it to several PSE users. It is amazing how many features are "hidden" unless you have someone tell you where to find them. And in my experience, most books were not written with the digital scrapper in mind. Emma's class teaches you to use the program for scrapping! It is well worth the money and you can work at your own pace during the month, which is great for busy scrappers.
