choose a font that is close to the look you're going for. Type it on there in a dark color, but not too close to black. Then change the layer blend mode in the Layers Palette from Normal to something else (scroll thorugh them all to choose one that works).
Google writing in the sand tutorial for a similar, but more popular effect to get some ideas too. Let me know if that helps at all

I sometimes will use an embossing on a font but in the downward position, playing around with the depth till I get the look I want. May that combined with the blending modes might get you the look you are hoping for.

I think Meryl has a carved text alpha, too, that might be a good thing to use. It is a shaded overlay font that makes it look like whatever you are typing is carved in something.

Oh - here is the link:
Carved Text Alpha (http://store.digitalscrapbookplace.com/index.php?main_page=product_info&products_id=5640) You can tweak this so that it looks as though it is carved into something :)

You can get the look of engraving with a drop shadow. If you are using black letters use 100% opaque, 0 blur, white shadow and the also apply one in the opposite direction. Adjust settings or colour of drop shadow to get the look you want.

I have all of Meryl's Digital Dates versions so will definitely have to get this, too. The DDs are just wonderful.
