I'm using Photoshop 7. How do I keep color in part of a photo, yet make another part black and white?

in ps there are always so many ways! there are tutorials for a few different ones if you click on tutorials above or here:

I have two methods, both similar to the one in both the Photo Tinting tutorials.
One is I use the Magnetic Lasso to select the object to remain in color, slightly feather the selection, Select>Feather 2 or 3 pixels. The Select>Invert and apply the adjustment, whether it's black & white, blur, whatever.
Also, sometimes I duplicate the layer, Layer>Duplicate, then make the adjustment to the top layer. Then apply a mask to the top layer and use a black brush to remove the adjusted part allowing the original to show through. I like this way better than the eraser because after I'm done, I change the brush to white and zoom in replacing the little details I've overpainted.
This is probably the technique with the most variations! Any more?
