newbie with an organizing question

I am very new to digital scrapping. I was wondering how you keep track of what you have. I've downloaded some kits but I have no idea how to find what I want without opening lots of folders. I'm thinking of using MS Digital Image suite to make the pages. Any suggestions will be greatly appreciated. Also, what format is best for saving, especially if it's intended for a gift? Thanks!
