This is a Patrick Holford recipe from his Food Glorious Food low GL recipe book !
Chickpea & Cauliflower Curry ..serves 4
2 Tbsp coconut oil ( or olive oil)
3 Tbsp or to taste Med curry paste ( or curry powder )
2 large onions sliced
1 small cauliflower broken into florets
410g chickpeas drained and rinsed
400ml can coconut milk ( not reduced fat..most of the coconuts renowned health properties are in the fat )
1 cup hot vegetable stock
1 Tbsp Tamari or soy sauce
250g fine green beans ( I usually use a few handfuls of chopped spinsch or kale instead)
Handful torn coriander
Fry the onions and the curry in the oil for 5 minutes
Add c/flower and chickpeas and stir to coat
Stir in coconut milk, stock and tamari.
Bring to boil, cover and simmer over gentle heat for about 30 minutes
Stir in the beans / spinach and cook for another 5 or so minutesor until beans are tender
Scatter with coriander before serving !
   I love this..it is quite horrible if you over cook it !
