This is a Patrick Holford recipe from his Food Glorious Food low GL recipe book !

Chickpea & Cauliflower Curry ..serves 4

2 Tbsp coconut oil ( or olive oil)
3 Tbsp or to taste Med curry paste ( or curry powder )
2 large onions sliced
1 small cauliflower broken into florets
410g chickpeas drained and rinsed
400ml can coconut milk ( not reduced fat..most of the coconuts renowned health properties are in the fat )
1 cup hot vegetable stock
1 Tbsp Tamari or soy sauce
250g fine green beans ( I usually use a few handfuls of chopped spinsch or kale instead)
Handful torn coriander

Fry the onions and the curry in the oil for 5 minutes
Add c/flower and chickpeas and stir to coat
Stir in coconut milk, stock and tamari.
Bring to boil, cover and simmer over gentle heat for about 30 minutes
Stir in the beans / spinach and cook for another 5 or so minutesor until beans are tender
Scatter with coriander before serving !

I love this..it is quite horrible if you over cook it !

Edit: Reading forward I now see that you are already aware of this momentous occasion

I see on the TV news that the UK is in the grip of extremem WINTER weather right now. We on the other hand are enjoying a very warm autumn (a tad too warm for me still at max 32 ish C temps but at least with the shorter days, it is hot for a shorter time)

I think I have asked you all before what would you save/take/need if the world was about to be changed and throw us back into pre-civilisation times. (I read a lot of armageddon/disaster/ distopian type books) . I have a list and one granny (I cannot remember which one) said that her husband already had stored some of the basic needs of living in preparation for such an event. I would store candles, matches, knives, can opener (to open cans whilever they remained available), axes, other tools/weapons, wheeled stuff (wheelbarrow, bikes, shopping trolley), blankets.....
